Vegetarian Burritos

I have a vegetarian friend coming to dinner on Friday and I know she loves vegetarian burritos. I've never made them before, does anyone have a tried and tested recipe for them, plus any ideas for accompaniments etc.

i would use an ordinary meat recipe just substitute the meat for quorn mince.


you could also get an old el paso kit


a good extra is nachos with salsa, quacamole and sour cream dips

Joko's idea is fine but even easier would be to fill it with refried beans, cheese, salsa, sour cream, maybe a bit of sweetcorn, chopped tomatoes, chopped coriander.

Thanks both of you. Old el Paso seems like a bit of a cheat, want to put in a home made effort :) You've hit the spot Gary, they sound scrummy, I'm going to do them like that, and feel free to join us, the mroe the merrier!!
Sorry to be a humbug, Bearworld, but check with your veggie friend whether she's happy to eat quorn. I'm a lifelong veggie and don't like the stuff (cos it tastes like meat !!). If she doesn't like it, then you could make a veggie stuffing with finely chopped onion, garlic, celery, mushrooms, peppers, aubergine, courgette etc - all lightly fried in a little oil, add a bit of chilli powder, chopped tomatoes, cooked red kidney beans and herbs and cook over gentle heat until veg are cooked.
