Quickest way is use cooked chicken, dice it up and put in casserole dish. Pour over a tin of condensed chicken soup, add frozen peas and sweetcorn, season, top with pre-made puff pastry and bake 40 mins til crust is brown. Cheating, but works.
This won't be as good as using wholly fresh ingredients though. You can add diced mushrooms, shredded leeks, spinach. corn, grated hard cheese (Greek recipe), sweated onions, apricots, spicy seasonings, various herbs, or vary the topping and use mashed potato - and add parsnip and sweet potato mixed in - or sprinkle grated cheese over this as well, or use cracker crumbs (bit of a US idea).
A good stock helps if you can make it all from scratch and if you can make a simple white sauce to pour over before adding other frash stuff this will really improve the taste, and always use the best chicken you can for real flavour.

Pick all the meat off a roasted chicken (or just legs if you don't want that much). Sweat off a leek in a little butter. Add a carton of cream and about 20 tarragon leaves. Put in the chicken. Allow to cool. When cool line a pie tin with pastry, tip in the chicken mix and put on pastry top. Brush with egg and bake on about 180c till browned on top. Really good with finely sliced white cabbage, lightly steamed and with butter and black pepper.
