au gratin is 'with cheese'!
Might be brule(e) is a specific burnt topping; flambe(e) is a flamed finishing of a dish; gratin or gratine(e) is a cooked crumb topping (as opposed to a pastry or similar) normally with breadcrumbs or grated cheese finished under a flame/grill.
Brule literally means 'burned' in french, and a bruleed dish (eg, creme brulee) has a burnt/caramelised finish...so, brulee should be the answer!
