what is the order that a pepper changes its colour


i.e starts green then red then orange then yellow. i have heard that this is the correct order but it does not sound right to me.

Red peppers turn from green to yellow to orange to red, but different varieties take different colours.

2nd question, is that where we get the modern day traffic light sequence from?

As I understood it peppers went green, yellow, red with orange ones being artificially coloured and not naturally occuring

I've grown peppers many times. Standard green peppers are unripe red or yellow ones, they go yellowy orange before turning red. They are edible in all colours, but if you pick the green ones too early they are a bit more bitter than supermarket ones - but still very tasty. Like tomatoes, Peppers don't just ripen to red as there are different varieties Some varieties ripen to yellow and some ripen only to orange and never go red.


I've never heard of artificially coloured peppers - maybe this is a new thing?

I've grown peppers for many years, but always the variety which is green when unripe and then slowly ripens to red. Other varieties will turn from green to yellow when ripe, or from green to orange.


If you grow a particular variety of Chilli called Hungarian Wax (which is a very attractive looking mild chilli), it will turn from green to yellow to orange and finally to red when it is ripe. The fruits are particularly attractive to look at as they change colour throughout the summer and I dot containers planted with them around my borders and on the patio where they are very decorative.
