I need ideas for family meals that I can prepare in advance, cook quickly and set one portion aside to reheat, for my mum who has just had a major operation. I have zero time to spare and any ideas would be greatly appreciated, cheers .

They're great for soups, stews, casseroles, and just about anything else you can think of. They make meat moist and tender and you don't have to do anything apart from brown off your food then put it in and switch it on. It means that you can throw together some ingredients while you have time and the meal is ready and hot whenever you are - you can easily leave food in them overnight.

Hope that helps - all the best to your mum.
Heres the chicken soup recipe anyway......we have this soup the next day after a roast with the left overs from the chicken. stuffing as usual if you like.
You will need
Potatoes chopped up
Carrots sliced
onion chopped
celery sliced
courgette sliced
if you haven't used a stuffing you can use fresh sage or thyme and parsley
Take the chicken carcass with whatever meat is left over on it and put it in a large saucepan covered in cold water.
Add a large chopped onion and a bayleaf and bring to the boil. you may need to skim off any fat that comes to the top of the water
Simmer for about 45mins and then remove the chicken, keeping the stock.
Strip off all meat that is remaining on the chicken and put it back in the stock with all the veg and cook till potatoes are soft, you can add a stock cube if you wish
I know this looks like it's time consuming but.......
Chicken Soup is good for the soul
