...stew it in a pan with a little water and some sugar (or sugar alternative) until tender, allow to cool, serve in a tall glass with natural youghurt and some toasted rolled oats ....

Thankyou, that sounds lovely. I think I will give it a go.
Not sure if you are allowed the low calorie jelly powder, but I love to make them up with the hot stewed rhubarb and some water. When set, it is delicious.

thanks pugwash52, that sounds nice too. I can have the jelly, what flavour would you recommend with rhubarb?

Being a bit of a sweet-tooth who loves rhubarb, I have tried nearly every flavour and like them all....and it's so easy.
You don't need to cook it. As children we used to pick it and eat it raw. Sometimes we would peel the 'skin' before eating it. It can have a sour taste but we enjoyed it. Most house gardens would have a couple or so roots growing and of course people would dash out when the coalman's horse had obligingly left the necessary to encourage the rhubarb to grow.

Stew with ginger and brown sugar.

Or see: http://www.astray.com/recipes/?search=rhubarb over 550 recipes there, so one should catch the eye.

Stew gently with chopped crystallised ginger and fresh orange slices (without the peel). You will probably need to add a sweetener as thubarb is pretty sharp, but I add a little of the syrup in which the ginger is bottled.
