I stir fry some diced chicken breast (sub your turkey) in a wok with some olive oil, chopped garlic, chopped ginger, garam masala, cumin, turmeric, corriander and cloves. Add either fresh or dried chilli to your taste.
When browned, add a big tub (500ml) of natural yoghurt and half a tin of coconut milk. Stir well and simmer quite vigorously until the mix reduces to a nice thickish sauce. I also add peppers, mushrooms, onions and pineapple to the simmering mix.
When the sauce starts to thicken, add about 200 ml of single or double cream, stir in and continue to simmer until your sauce is to your liking.
I find the addition of a few squirts of lemon juice is nice and if the mix needs sweetening, i add a sprinkling of sugar to taste.
Right at the end, stir in a little chopped corriander leaf.
You can tailor any of the above, either leaving out some of the above stuff or adding your own. Some people also add tomato puree or blended tomatos but they're not for me.
