With what defining product do Tuscan cooks benedette - ie give benediction - to their soups?

Is it with Tuscan Olive Oil??

I thought they add a droip of vin santo - holy wine - which is frequently served as a dessert with panforte. I thought that referred to the benediction of traditional soups, which are usually served with a layer of thick tuscan vbread, soaked in vin santo, at the bottom of a vegetable and pulse-rich soup like minestrone. The vegetables have usually been fried in extra virgin olive oil, so maybe that's where the benediction comes in too?
