I have just bought Smoked Mackerel and 1 red pepper. I'm planning making some pasta for dinner, any ideas of what I could use for a sauce? Nothing major that's going to take lots of ingredients to make. Somthing simple that I can buy.

Add a little flour, cook 1 min and add tin of chopped tomatoes, some herbs and season to taste. Cook another 5 mins, add the flaked fish, and serve over pasta with grated parmesan cheese over.
To dress it up a bit - grill the pepper first, skin it, chop and add to sauce for a sweeter version (fried red peppers can be a bit bitter)
Or grill the pepper and skin it, blitz in a blender with cooked onion and garlic and a little extra oil to loosen. This makes a good 'sweet and sour' flavour sauce. Add soy and chilli to spice it up, Thai fish sauce if you have it, and a touch of wine vinegar. Marjoram and basil are good herbs to use.
How are you with making a cheese sauce? Fry some onion and garlic til clear.(1 or 2 mins) and make a roux for a white sauce but add grated hard cheese and season for the sauce. Add the onion and garlic, then add cooked peas, the mackerel and then simmer for 5 mins. Don't let it boil. Skin and deseed a tomatoe, and cut to tiny dice. Add to sauce, cook 1 min and serve over pasta with extra parmesan
Fry the red pepper, with onion and garlic and a tin of chopped tomatoes. Add some herbs. Add lemon or lime juice and chopped deseeded chilli. Add flaked fish and heat through. Cook pasta and serve sauce over with a nice side salad.
