whats the best way to keep sandwiches fresh im having a buffet and want to keep sandwiches as fresh as possible

Use damp greaseproof paper, wet it under a tap & wring it out then put over the sarnies. If you need to keep them longer than a few hours put foil over this. I once made afternoon tea for 2000 people ( not on my own!) we made the sandwiches the day before and they kept perfectly like this.

you could freeze them if you want to do them in advance (depending on the filling of course). several layers of cling film always works for me - and you can see whats underneath.

You could perhaps only put out some or half of the sandwiches (keep the rest in the fridge) and then see how quickly they are eaten. If they go fast, put out the others, if not only replenish as needed.
I worked with a chef who would rinse a clean tea towel type cloth in ice cold water, ring it out as much as possible and then drape over sarnies. I
get some kitchen paper (the 1 on the roll)sprinkle with cold water so its kinda damp then use cling film i am a chef and it works every time.
