Like Bohne, I love chicken with honey, but I cut the chicken into strips add a tablespoon of honey, a tablespoon of dijon mustard, half a lime juice and a decent amount of soy sauce then stir fry it. I don't suppose there is anything to stop you putting that in the oven though.

Chicken - if it is a good quality one, (and presume it is) just simply roast with a lemon in the cavity for extra moistness and some butter under the skin for basting. Make a good gravy from the juices and leave the bird to stand before carving so the meat relaxes.
