Am I the only one who gets annoyed by the J Oliver/Sainsburys, 'Try something new' ad campaign. The latest amazing 'new' idea is letting your roast joint rest for 20 mins before carving to make it jucier. Sorry, but thats standard practice with all roast meats. The best one ever was combining sausages and apple. Oh my God!!! Who'd have ever thought of that. Pork and apple!!! AAHHH

And letting the meat set will make it better to carve amung other things... I find nothing wrong with Jamies cooking.. He is bringing cooking that has been going on for years and years from other parts of the world to the UK... Remember the Uk is has a rep for blan food..
He with other chef's are getting rid of the (blan) rep..
