crush digestive biscuits and mix with melted butter and caster sugar, place in a spring bottom tin and put in the fridge
in a bowl mix philadephia, eggs, double cream and caster sugar til really really smooth. pour over the biscuit base and bake for about 40 mins til it is set but it still needs to have a slight wobble. leave it to cool in the oven so it doesnt crack i normally leave it overnight. then put in the fridge....it is amazing. p.s you can flavour it with lime or lemon juice to make it a bit zingy or if you feel a bit naughty some melted chocolate and baileys is gorgeous!!! enjoy!
mix together the crushed bics.. melted butter and 3 tablespoons sugar, press into base of tin.Put in fridge for about half an hour to set
Preheat the oven to 170 C / gas mark 3.
In a large bowl, mix together the sugar and the cornflour. Beat in the cream cheese, egg yolks and vanilla.
Slowly pour in both of the creams, beating constantly.
Add the salt and lemon zest. Whisk the egg whites to stiff peaks, then fold into the cheese mixture. Scoop onto the chilled base.
Bake for 1 - 1 1/2 hours without openinig the oven door, until the cheescake is golden brown on top (lets hope you have a glass oven door like Nigela oviously has...either that or she has x-ray vision) .
Turn off the heat and let the cake stand in the oven for 2 more hours. Then open the door and let it stand for a further hour.
Serve chilled , dusted with icingsugar, with berries of your choice
