most sweet bread rolls have an apricot jam glaze or a topping of icing sugar with loads of water so it doesnt discolour the top of the rolls... not sure if its what u are looking for tho but i hope it helps

I have had some lovely bready goods in Germany. The Germans know how to bake!
Near Edinburgh? Come and see Falko at Edinburgh Farmers' Market on Saturday - he is a master baker that has the best breads and pastries, just like you want - always people queuing all morning for his wares. 9 - 2, Castle Terrace. Easy parking and loads of stalls.
hi nickmo, i go there nearly every saturday, its fab

They might be glazed with a milk/sugar mixture.
That's what I use for some sweet rolls.

Or just milk without the sugar for my parents, or they'll bitch that it's too sweet...

:o)

thats great, thanks everyone
It depends on the dough. If it was a rye/wheat mix dough, brushing the bread with water as soon as it comes out of the oven froms a dextrose, which your tongue will sense as slightly sweet. Some bakeries may use a sugar solution.

Sweet yeast dough breads/rolls are usually just glazed with eggwash (pure egg whisked, fermented with a little salt). Again some bakeries add sugar to the eggwash to get a sweet glaze.

If you see a sugar crust on them then it's just a fondant glaze. Hope that helps.
