Best I can think of is a Vegetable Terrine .. takes a while to make but you can do itt way in advance.
Gazpacho soup Guacamole/Salsa dips with Tortillas Asparagus with vinagrette Try checking out the recipe sites - ther's loads
Vegetable samosas.
Stuffed mushrooms? Spring rolls? With a nice sauce they are both lovely cold. If they eat fish what about Prawn Cocktail.
Tomato and mozzarella: slice both, stick em on a plate, sprinkle with herbs (not sure which, sorry) and black pepper and voila, dead easy.
very similar to rja and my favourite starter/barbecue salad - slice up mozzarella and tomatoes, arrange on a plate, drizzle with a good olive oil and sprinkle with either fresh basil (ripped up ala Jamie Oliver style) or a pinch of dried italian herbs (can be bought as a tub of "italian herbs"). Alternatively you can serve this hot by baking for about 10 minutes
