Does anyone have a good recipe for a pizza base i can make at home? I only want to make a 12" wide really thin base, do I need to have yeast? I know there are plenty of recipes on the net but the last one i tried was like a slab of concrete and I would appreciate any personal tried and tested recipes!

I once tried a really quick and easy recipe for a scone pizza base. It requires no yeast and is ready in minutes.The only problem is it was in an old cookery book I nolonger have and I have never been able to find the same one again. However if you look up ''scone pizza base'' on Google you might find a similar recipe.

I prefer a yeasted pizza base but to make an Italian style thin and crispy pizza you need:


Flour, oil, salt. Erm, that's it.


Preheat an oven, preferably yours, to as hot as possible and place the cooking surfaces you're going to use in the oven; pizza stones are best but big-ass baking trays will do.


Place the flour (I usually work on 150-200g for a roughly 10" pizza. Bung it in a food processor on slow mix with the salt and mix while you drizzle in the olive oil. You'll end up with a silky dough. Dust a working surface with flour and flatten to the desired thickness and shape. Resist the temptation to do the finger-spinny-thingy beloved of professional pizza chefs because you aren't a professional pizza chef. Add topping(s), then slap on the sizzling hot sheet and, as fast as your legs will carry you, bung it back in the oven. Your pizza is done when the topping is melty and the pizza edges look crispy and golden. It cooks quickly so pre-cook anything that might be dodgy as a topping, specifically chicken.

Ta, anything more specific on the measurements dingoeater?!

For a really nice thin and crispy pizza...use some tortillas (the round floury things that are used to roll mexican stuff in)

banth - more specific. Really just use enough oil to bind into a dough, I never end up using a specific quantity myself. As to flour I have a cup I stole from the Marriott in Amsterdam and two of those makes a pizza that fills my baking tray and the area works out at about a 10" circular pizza. I've never actually weighed the contents other than the rough estimate above. The good thing about the recipe is it's virtually instantaneous so you can add/make without waiting for it to rise.
i just use a normal white bread dough it comes out lovley so just look for a bread recipie

Well, I made one last night and it turned out fine! I used 1 1/2 cups flour, tsp baking powder and salt, half cup of warm water and 2 tbsp olive oil. Luvly jubly! Ta everyone, esp dingoeater.

Don't use bread


- get a chicken breast, place between two sheets of greasproof paper / clingfilm and beat out to a thin even layer. Top with pizza sauce and topping, and bake for 15 mins or less (check completely cooked through) and watch the faces.......
