Cut in half and put a knob of butter and a sprinkle of salt and pepper on top of each half while still hot. The skin shoud come away easily
Microwaving is healthier because nutrients are dissolved in water and destroyed by heat, and the microwave oven does not use/require these.
Try roasting some sweet potatoes, carrots, mixed peppers, red onions and mushrooms in some olive oil with rosemary. You might need to cut the carrots into slightly smaller pieces as they take a little longer to cook. Season with salt and pepper, and serve with either couscous or rice and a fresh sweet pepper sauce. Yum!

I was just looking at this recipe, do you think you grate the sweet potato? or add it as small chunks? Just curious as I think I may make some these weekend :o)
