does anyone have any really easy recipies for carrot soup, as i'm lucky enough to have a large supply of carrots!

I like simple and tasty recipes so what I do with carrots is grate them, then simmer in pot with grated onion and chicken stock cubes. When cooked I add plenty of black pepper. Then, pop into freezer bags and freeze. I am sure you could have many variations, but why not stick with the easy option.

And if you get sick of soup and have a juicer try carrot and orange juice over ice - lovely! Or carrot cake.

trust me this is gorgeous. Sweat a large chopped onion, 6 chopped tomatoes and 6 diced carrots in butter till soft. (10 mins) add a pint and half of chicken stock simmer till tender. Blend, sieve and add 2 tbs creme fraiche. Lovely and a doddle to do. Enjoy !it
My favorite [from the Moosewood cookbook] In the pot, saute a bit of onions and 1 potato (in butter, if you dare).Add a tiny pinch of thyme and/or oregano[or, alternatively, ginger] and salt. To this add roasted cashews and set aside (in blender or food processor) Cook your carrots in the same pot. Let them cool down.[safety tip from one who knows] Now puree the lot. The closer to serving time that you puree your soup, the orangy-er it will be. Top with sour cream or plain yogurt. Eat with french bread. God it's good. Aloha
Can I add something else? I just saw the recipe where the cook grates the carrots. I used to do that, until I discovered that you can just wash the carrots, cut off the tops, and chop them or snap them in a couple of places, and boil them. Works, and retains more of the color.
