Basic is 3 x water to samp and a bit of salt. Soak the samp over night as you would an oatmeal, then drain it, add the fresh water and salt and boil for 30 - 40 mins. Use in place of potato, rice, pasta perhaps......no fat, no protein, no calories, just about as minimum value to eat as you can get.
- try it as a 'rissotto' - add some spinach, cubed squash, beet, lots of seasoning and herbs, garlic, bit of hot sauce.
Or with loads of herbs and chillies plus mixed beans
Or as a base instead of couscous - add mushrooms, onions, herbs - needs lots of seasoning to be at its best.
Add cooked veggeis - courgette, carrott, onion, spinach, peppers, green beans - to part cooked samp and finish off 'til done
