Rubarb and lots of it!!!

Hello. I have been given heaps of rubarb from my mum, all most too much ;o) My plan was to make some jam with it and give it away to friends as gifts. I was thinking rubarb and ginger jam, maybe some crumble and anything else lovely that may come to mind. Does anyone have any ideas? Thanks in advance! xx

When I was a kid one of the Mums down our street would give all us kids a stick of rhubarb each and a pot of sugar to dip it into. Must say I've not eaten it that way for a while!

Ahh, such memories, a stook of rhubarb and poke o' sugar. My Mammy used to make rhubarb and ginger jam too. I loved stewed rhubarb and custard as well

Ginger and rhubarb are a match made in heaven. i think its best to keep it simple; reduce down the rhubarb for 15 mins with chopped fresh ginger and some brown sugar. Serve with single cream and ginger snaps. Schlum
