Good luck!
7oz Plain flour
Half a teaspoon cinnamon
Ditto nutmeg .
This is a teaspoon scraped level with a knife..
I teaspoon baking powder
1 teaspoon Bicarbonate of Soda,
5 oz Dark brown sugar
7 Fluid ounces vegetable oil
3 eggs and about half a pound of carrots roughly grated and 2 ozs chopped walnuts
Sift all the dry stuff into a bowl, stir in the sugar, whisk the eggs and oil together and stir into the dry mixture then add the carrots and walnuts.Give it a good stir then put it into a square deep cake tin lined with greaseproof .8 inch tin would be O.K
Bake in a preheated oven for about an hour to an hour and fifteen mins. 150C..Gas mark 2.
Let it go cool then turn out onto a wire rack .
Make some icing type covering or filling by beating together 6oz cream cheese (Philadelphia) the juice and zest of an orange and 4oz icing sugar.Cut the cake and fill or put the icing on top.
