Could anybody give me a recipe for vegetarian stuffed tomatoes please. Thanks

For more on marking an answer as the "Best Answer", please visit our FAQ.Boil rice, season with garlic, parsley, cooked diced peppers, onion. celery. Slice top off tomatoes, scoop out flesh, sprinkle salt on inside of 'shell', fill with rice mix, dribble over olive oil and bake for 10 mins. Use the beefsteak toms for ease, or cherry toms to show off.
Cut top off toms, take out flesh, mix with breadcrumbs, feta cheese and herbs. Season. Place back in shells and bake 15 mins.
No cook version - slice top off toms and sprinkle salt on inside after scooping out flesh and seeds. Chop and mix with seasonal fresh salad stuff and chopped hard boiled egg, stir in a light mayonnaise, fill shells. Eat.
Other filling: Cream cheese, spring onion and herb or add cooked crab meat as well for another flavour.
Spicy mix: Scoop out and chop flesh. Drain the toms and fill with sour cream, chilli, diced pepper, shredded cheese and spring onion. Grill for 2 mins, top with more cheese and grill another 2 mins. Eat.

In a frying pan fry up some chopped onion, mushrooms, courgette, the insides of beef tomatoes and sweetcorn (you can use any vegetables you like. Add some cooked rice, herbs (we like fresh parsley or fresh basil) then stuff the filling into the tomatoes. Top with cream cheese (although feta or halumi are also good) then bake them in the oven on a medium temperature for about half an hour.
