belting beetroot!

i've just come back from market with a huge bunch of homegrown beetroot - i couldn't resist it!
But now i've got it home - what do I do with it??

Look up borsht or borscht - Russian beetroot soup, can be served cold (which is handy, if the weather keeps up).
Ahhhh, the vitality plant - well done for buying it. It's really versatile, here's an interesting link which tells you all about it (cooking, recipes, info etc). Note the comment at the end about pink wee :)

...oooh homemade beetroot chrisps are gorg. with a sour cream dip...ditto parsnips and carrot chrisps....
I cook mine in the pressure cooker when cold slice in a dish with small amount of pepper and salt and vinegar. Eat with salads and cold meats. My favourite is sto eat it warm between 2 slices of buttered bread. Don't be upset when you pee red.
peel it and boil it............then enjoy with whatever you fancy....but for god sake keep the vinegar away from it, whoever dreamt of ruining beetroot with vinegar needs stringing up...and no it doesnt bloody matter if it pickles it or makes it last longer...its vile in vinegar.
Wrong weather, I suppose, but it is gorgeous roasted whole with beef.

Or, steamed/boiled, then put slices in a small, round goats cheese.
If they're medium size, cook them in your microwave in water for about 30 minutes on High.
They're delicious eaten hot with egg and bacon, or grilled gammon steaks.
Or peel them whilst warm, mix in with some chopped new warm potatoes and some anchovies and serve as a warm salad.

after looking at some of the links i roasted in the oven and then peeled and cooled and made a salad with chopped apple, celery and walnuts. it was delish but next time i'm going to try with the goats cheese and maybe bacon and egg!
When the weather cools a bit, i'm going for the borscht as i truly love all soups.
catso, it's NEVER too hot for roast beef!!
