Hi guys, I'm cooking for my family this weekend and I was planning on doing BBQ chicken (chicken breast wrapped in bacon, with BBQ sauce, topped with cheese).
What should I serve with this? I'm a bit sick of rice, have it all the time! And chips don't really seem appropriate..
I have a recipe for sweet potato souffl�, but it is very sweet (USA) and is really better served with plain meat (turkey).
but can post it if you want?
How about thick slicing some potatoes with skins on, onions, green peppers, celery, some mushrooms (******* or Portabella's)... a little garlic, sea salt, fresh ground pepper, a little oregano and thyme... double wrap it all in aluminum (aluminium?) foil with about 3 nice pats of butter and 1 quarter cup water. Place it on your grill or in the oven for about 45 minutes... works here every time! Experiment with the herbs you might like... Good luck!
What about some stir-fried vegetables? If you don't fancy that you could always dry roast some baby new potatoes and vegetables. I chop all the vegetables and put them into a bowl with a tablespoon of olive oil and some salt and ground black pepper stir until they are coated and then put them onto a baking tray - spoon the rest of the oil over the top and roast until cooked to taste. Braised savoy cabbage is also nice - Cut into large chunks and cover with chicken stock them braise in the oven until tender - Right I'm off now because I'm feeling hungry!
