whatever you want it to be
i think you mean Braciole, here is a recipe.

3 cups of tomato sauce
1 1/4 cups of flavoured croutons
1/3 cup grated parmesan
2 eggs
1 tbs chopped fresh parsley
1 tbs chopped fresh oregano
1 tps finely chopped rosemary
1 tps finely chopped thyme
1 clove of garlic
1 pound of flank steak (pounded to 1/4 inch thick)
olive oil for brushing
veg oil for searing

preheat oven to 350 degrees, F
place tomato sauce in baking dish & put in oven to heat.

mix croutons, cheese, eggs, herbs & garlic in food processor till forms a paste.

brush steak with olive oil & season with salt & pepper, spread filling over meat, then roll tightly & tie with butchers twine.

in large pan put 1-2 tbs of veg oil and sear all sides of the meat.

put meat into baking tray with tomato sauce and cover with tin foil, make sure the foil isn't touching the meat.
braise for 35mins. can be cooked for up to 3hrs.
I think they were munching braccioli or braciole (pronounced approx. as brashule or brash-e-ol-e)

Its a beef steak beaten flat and highly seasoned, rolled with proscutio, herbs, breadcrumbs and cooked with a garlic flavoured tomato sauce - I'm sure evry nona will have their own take on it, such as adding mushrooms in season, or varying the meat - use a veal or pork, and so on.

episode 18, series 4 by the way . . . . like the show? heres the site: http://www.everybodylovesray.com/index.html
