Yes, they're a great way of testing if a joint is throughly done. Without one, I always end up with black on the outside and pink in the middle but by roasting slowly and for a little bit longer, it seems to have worked. A meat thermometer accurately checks the temperature of the meat inside and is much more reliable that sticking a fork into a chicken leg to see if the juices are clear
