What is blue steak? I was in a French restaurant recently and asked for rare steak. The maitre d' asked if I wanted 'blue' steak (I declined) - so I gather this is more extremely rare? It can't be raw like steak tartare? Is this a French term or a general culinary term?

Blue - very lightly cooked, very bloody on the inside.

Rare - lightly cooked, with only the outer layer turning brown. Mostly red inside.

Medium rare - lightly cooked, with a slightly deeper cooked outer layer. Red inside.

Medium - cooked through, with deep cooked layer. Slightly red inside.

Well done - cooked through thoroughly, no red inside.

its the only way to eat steak..really not cooked at all
Clip its horns, wipe its backend and walk it through the kitchen (not too slowly) ;-)
I thought it might have a blue cheese sauce on top :o)

Strangely, the rare steak that I had at this restaurant DID have a blue cheese sauce on top! lol. It was delicious. Can't wait to return and request blue steak... At the time I had only just started eating rare steak so was a bit scared. But it so is the only way to eat steak... Mmmmm. Hungry now!
