Have you ever eaten anything fresh from the hog? Everything you name is processed in one way or another, at which time salt or nitrates are added. For example, here in the U.S., a popular pork product is called side pork. It's actually the cuts of the pig that are used to make bacon without processing into bacon. It isn't salty at all. Same applies to other pork products that don't require processing for preservation...
