Can I safely freeze Chorizo.

Just bought 1/2 yard at Lidl and really only need half of it for tonights Cassoulet

what is chorizo?

Chorizo Cassoulet

1 tsp vegetable oil
55g/2oz chorizo, diced
1/3 onion, sliced
handful of herbs, chopped, including parsley, coriander and chives
2 garlic cloves, crushed
85g/3oz kidney beans, drained and rinsed
1 tomato, diced
55ml/2fl oz chicken stock
salt and pepper, to taste
55g/2oz breadcrumbs, toasted

Heat the vegetable oil in a pan.
Saut� the chorizo and the onion together for 2-3 minutes, to soften.

Add the chopped herbs and the garlic, and cook for a further minute.
Add the kidney beans, the diced tomato and the chicken stock.
Bring to the boil, season to taste, then simmer for four minutes.
Pour the mixture into a gratin dish, sprinkle with the toasted breadcrumbs, then grill for two minutes, until golden.

Serve straight away.

If you think the quantities look a bit odd its because they have been scaled down to produce a portion for one person
many thanks, dewi did you see rick steins programme from France about cassoulet, im sure he used belly of pork .
I thought the point of such preserved meats as chorizo was that you don't need to freeze it. I keep mine in the fridge, Spanish peasants probably hang it from the rafters.

Sausage comes vacuum packed, Normy

Package is clearly marked "keep refrigerated,once opened consume within three days"
So I either " pig out on sausage :-) " over the next three days or I freeze it.

Yep crete, saw the Rick Stein - don't fancy the belly of pork at all.

Saw one recipe with about fifteen different ingredients, simple peasant food ?

Hi Dewi,
Chorizo does not and indeed should not be frozen, as this is a cured meat so will last a while in the fridge. Make sure you wrap the cut end with cling film.
