Why not try browning off some mince and adding some chopped onion and some tinned tomatoes, this can then be frozen and defrosted and revived as spaghetti bolognaise (add some mushrooms, garlic, oregano), chilli (add mushrooms, chillis, cumin), mince and gravy (peas, stock), burgers (for these I add chilli, egg, basil, garlic, a little ketchup and some mustard). All you have to do then is added potatoes, ric or pasta and veg, which are cheap, for a meal.
Eggs are filling and cheap and you can add veg to those too, i.e. in an omlette or frittata
Jacket potatoes can make a good meal, and you can fill them with anything you fancy!
