Keeping sandwiches fresh

I'm making sandwiches for 200 on Friday, worried they might dry out by the time they're served at night - any suggestions on how to keep them fresh, will cling film do?

For more on marking an answer as the "Best Answer", please visit our FAQ.Cling film should be fine for a day but if you want to be extra sure a layer of damp greaseproof paper ( put the paper in a bowl of cold water, then screw it up to wring it out) under the clingfilm will keep them really fresh.
I once was part of a team that had to do afternoon tea for 2,000 at an outside do, we made the sandwiches the day before, all went well until we put some of the trays on the floor under the trestle tables and they got covered in ants!

I'm doing homemade houmus & peppers, tuna lemon mayonnaise & cucumber, brie & cranberry, chicken & bacon with tarragon mayo, prawn & avocado, cream cheese with cherry tomatoes & spring onion. got to keep it on the safe side of flavours to suit all tastes but one of my favourite is ham, jarlsberg cheese, grilled artichokes & olives. Yum. Or you cant beat a good old BLT with freshly grilled smokey bacon and lurpak butter on white fluffy brread. Used to own my own sandwich bar so had alsorts of strange requests and yes i should have known how to keep sandwiches fresh but mine were made to order and out the door as quickly as they were made! Weirdest request was egg with sunblushed tomatoes and a mashed banana. It was a guy so no excuses about being pregnant! Anyhoo, off to prepare, hope that's given you some ideas amu. Ciao.
