What are the specific differences between burritos and enchiladas? Is it just that the second comes out of the oven and the first doesn't? Or is there something else?

Burritos are made with flour tortillas. An enchilada is made with a corn tortilla and served with a sauce topping.
More to the point does anyone know any good mexican restaurants...and I don't mean the fake Tex mex. And while we're on the subject what about cajun restaurants?
