Try this strawberry pavolva recipe. It's perfect for now because strawberries are everywhere.
It takes about 20 minutes to prepare and an hour to cook.
You need:
3 egg whites
5ml (1tsp) cornflour
5ml (1tsp) vinegar
175g (6oz) caster sugar
300ml (10 fl oz) fresh double cream
225g (8oz) strawberries
Whisk egg whites until stiff. Mix the cornflour and vinegar together and whisk into the egg whites with half the sugar. Fold in the remaining sugar. This is the meringue mixture which you then spoon into a round on a baking tray. Bake in the oven 170C (325F) Mark 3 for about 50 minutes. It's ready when it's crisp and dry. Whip cream until softly stiff. Pile cream into the centre of the pavolva and decorate with strawberries.
