I am not a diabetic - so I am not sure you can have this - but it looks like an interesting Smoothie for this time of year:
Pumpkin Pie Smoothie
1 (15 ounce) can solid pack pumpkin puree
1 (12 fluid ounce) can frozen apple juice concentrate
0.4 g ground nutmeg
2 g ground cinnamon
590 ml water
Remove pumpkin from can and freeze for 1 hour.
In a blender combine partially frozen pumpkin, frozen apple juice concentrate, nutmeg and cinnamon. Blend until smooth. Continue to blend while adding water to fill the blender.
I love making fresh fruit smoothies, strawberries, banana, raspberry, mango, kiwi, blackberries, blueberries whatever you want really and experimenting is part of the fun.
Just bang a mixture in a blender with some orange or other fruit juice.
A good tip is to buy frozen fruit as it negates the need to put ice in and works out a lot cheaper on the whole. Or buy a load of fruit when it is in season and fresh and freeze it.
