Do I have to use a cast iron pan to flambe? can I use a stainless steel one?

You can use a pan of whatever material you like, however, plastic is best avoided.

No, you don't have to use a cast iron pan.
Yes, you can use a stainless steel one.

any pan will do, just be caeful the amount of booze you put in and don't lean over the pan at any time!
