A bird within a bird within a bird.

This was on River Cottage last night which I sadly missed. Can anybody tell me what birds Hugh Fearnley-Whittingstalled used and in what order?

If so, the 10 were....Woodcock, Partridge, Pidgeon, Pheasant, Guinea Fowl, Mallard, Chicken, Aylesbury Duck, Goose and Turkey (in that order),
