krista - I freeze cheddar regularly, I buy a large chunk & cut it up in to useable slabs, wrap in greaseproof paper & place in a sandwich bag or sealed plastic box. Other than cheddar I am unsure.

Just about all cheese freezes well, though it can defrost to a different consistency, particularly the softer varieties - still perfectly edible though.
OK - not exactly left over cheese - uneaten cheese! Particularly brie and stilton. As they are both high fat I expect them to freeze successfully. If their consistency when defrosted is not appealing I'll use the cheese in cooking. Thanks!
If you are freezing cheese wrap it in tinfoil NOT in a plastic bag, I can't tell you the scientific answer for this because I don't understand it but a lifelong cheese merchant in Kirkgate market Leeds assures me you should never freeze cheese in plasic bags.
I've followed that advice for the last 35 years and my cheese has always been O.K.
Could be because the plastic makes the cheese sweat? Ooops - have already frozen in cling film. Will report later how the cheese is when de-frosted. Thanks - Krista
