Cover with cold water immediately after cooking.
When cold roll them on a hard surface (I usually do them down the side of the kitchen sink) make sure the shell is well cracked all over, including the ends.The shell should then be easy to remove.
Plunge into cold water for few mins and then roll them to crack them. Supposed to be bestto peel from pointy thiner end first but i not so sure. Its true about the fresher they are the harder they are to peel - we keep chickens and would only boil eggs that were a few days old, day fresh ones are buggars to peel
