2 lamb shanks
1 onion
2 Carrots
1or2 Sprigs fresh rosemary
2-3 garlic cloves
1 bayleaf
Fresh Mint Leaves..... handful torn into the stock after adding to cooker
1 1/2 pts Lamb or beef stock
approx 1/2 bottle red wine
1 Lemon
2-3 teaspoons cornflour mixed with a bit of cold water
Seasoning
Put on the slow cooker to high.
I squeeze lemon juice on the lamb shanks whilst prepping the veg and making the stock and then fry on high to brown off.... and place in cooker.
I then fry off the carrots and onions and and chuck those in the cooker too.
I throw in the herbs aswell.
I then add the stock to the frying pan to scrape off any residue and pour that into the pot.
I then pour the red wine into the frying pan and reduce it, by simmering till it reduces by a 1/3 roughly..... then pour into the pot.
I then add the cornflour.
I leave it cooking on high for about 7 hours.... so I start it at midday and it's ready when he gets home :-)
I serve this with potatoes.
I think there are so many recipes for Kleftiko....... but this is the one I do...... :-)
