My mum thinks it would be ok just to spread wholegrain mustard over the salmon fillets...would this work?

yes it will work but it will be horribly bland.....even a sprinkle of oregano on top of the mustard would make a difference. How is she cooking the fillets? I would hope baked and covered with foil. She could add parsley, lemon, rosemary, and a bay leaf to that little lot and get reasonable flavour but with simply wholegrain mustard I don't think you'll end up tasting a fish flavour, or tasting anything at all.

Thank you very much - we have all those ingredients to hand, so will try it tonight (I had a feeling that just the mustard wouldn't be a great idea!) Your reply's much appreciated.
I would have thought that using wholegrain mustard on its own would certainly clear out your sinuses.as it can be a bit firey......
