Any ideas how to make a traditional spicy sauce for pakora - not a raita. I have asked my friend at work and although she has given us all authentic recipes for pakora - she hasn't spilled the beans on the sauce. she keeps saying she'll tell us and we're all waiting with mouths drooling waiting.
No simple answer to this - depends on what you prefer so experiment.
Finely chopped onion (optional). tomato ketchup or puree, yoghurt (optional), cayenne pepper or finely chopped chillies, fresh coriander (optional). Water to make it runny (optional). Mix and enjoy.
