keeping risotto...?

Yes.

Or make rissotto balls and fry it off tomorrow - put a bit of mozzarella in the middle of a handful of rice, form into a ball, roll in egg and breadcrumb, fry to colour.

It is possible, but it does not sound too appealing.
I often make Risotto in the evening and pop it in the microwave at work the next day!

I wouldnt eat cold rice not sure but I heard cold rice contains listeria which causes food poisoning.
