can parmesan cheese go off?

got a wedge of opened parmesan in the fridge,not sure if its gone off. it seems to have white spots on it here and there. had some on pasta last week and seemed ok.

it can go off if it hasnt been covered properly.

I store mine in the freezer and it lasts ages!! no need to defrost it you just grate it onto the dish and it melts!!

The white spots are amino acids that develop during the ripening process. They add a 'crunch' that some people like. otherwise, just scrape them off.

I recently had some 4 year old Parmesan... intense... made my eyes water! ;o)
