why do recipes sometimes tell you to flour meat before cooking?

If fry ing the meat, it makes it a lovely brown colour. It can also help thicken it's sauce.

flour also prevents meat and vegetables from sticking to the pot when frying.
I hate browning meat. Always splatters everywhere and I have to clean the hob, walls etc. Seems to me that you get less splattering if the meat is coated in flour.
