with the exception of peas and roasted foods (fatty though?)
so what can I do to make them more exciting , but keep all the goodness and all that hullabaloo.

For more on marking an answer as the "Best Answer", please visit our FAQ.If you like your veg roasted then there's no problem - just use a small amount of olive-oil in the roasting tin and the fat content isn't a problem. Squashes, leeks, courgettes, aubergines, peppers, mushrooms, sweet potatoes are all superb roasted. You could also make your own soups, especially with the addition of some herbs, which would be much healthier and cheaper than bought versions.
Make a stock (or justbuy stock cubes) and chop up veggies of choice and let them soften down in the stock in a pan, season to taste and add herbs of choice then whizz in a blender.
If you want the veggie bits in it then don't use the blender.
Certain veggies add more substance such as potato and you can add cream if you want a creamier if more unhealthy soup. You can also add noodles, pasta, croutons, meat etc...

Cooking vegetables with meat in a stew gives the lovely taste to veg. which just steaming or boiling lacks. There are more calories because of the fat content in the meat though. You can leave it to cool if it's red meat and take off the hardened fat. I find a veg. casserole with beans and sliced smoked sausage another lovely dish.
Eating them raw is healthier in a tossed salad with olive oil dressing: grated carrot, grated celeriac, cucumber etc
