What is the best way to use Velvet Crabs and do I have to clean them like their larger cousins?

Product: Cooked live and frozen brown crab, velvet crab and whelks.
You can just pan-fry them in oil or butter and serve with lemon juice and parsley, but the nicest way I have had them is the way the Korean community do them around here...in a chilli sauce (maybe just add chilli paste?). I'm sorry, I don't know if they clean them, but they are not served whole...they are probably smashed open with a blunt cooking utensil.
