My recipe for tonight's supper calls for 3 tbs soured cream - I only have single cream in the fridge... can I just add some lemon juice to it ? will it work ??

Sour cream is fermented cream.
The fermentation produces acid to make it sour and thickens it.
You can use Creme Frechie as a substitute (and healthier option).

It would depend on the recipe. Many recipes suggest the use of a lemon if you haven't got the genuine article.
