It's a kitchen gadget used for extra-fine slicing. Good ones are quite expensive - be prepared to pay about �140 for a metal one, which should come complete with a guard to stop you slicing your fingers off. Outside professional kitchens, few people use them, but they are great for the thinnest slices and most uniform juliennes of carrots.

At the hotel I used to chef at we generally used ours to cut large gouges out of our hands and fingers. Evil machines without guards!!
