I have just cooked a duck, is there any point in making stock with the carcass and if so any ideas what I can use it for? Apologies if this sounds stupid but have never cooked a duck before, can I just use it as I would chicken stock, say soup for example?
Make sure that you cool it completely in the fridge before you use or freeze it as you will probably find there will be a layer of fat that you'll want to remove.
