2 egg whites
1 teaspoon vanilla extract (we also use almond extract for a difference)
1/2 teaspoon salt
1 cup sugar
2 cups flaked coconut
Directions:
Beat egg whites until stiff. Gradually beat in vanilla and salt. Beat in sugar, one tablespoon at a time. Fold in coconut. Drop by teaspoons onto parchment paper on a cookie sheet. Bake in a preheated oven at 325 F for about 20 minutes or until golden.
